Case Study - Gwen by Curtis Stone

Working with LA’s best restaurant team

Gwen is a fine dining restaurant experience and old-world butcher shop in the heart of Los Angeles. Uniting with our Global Chef Ambassador Curtis Stone to bring his vision to life for Gwen LA with our full uniform and chef wear range was a truly collaborative process.

Cargo Crew are thrilled to dress Chef Curtis Stone and his team at his restaurant Gwen on Sunset Boulevard in LA. “Gwen” is a homage to his maternal grandmother who lived on a livestock farm outside of Melbourne, Australia.

The Gwen team proudly wear Cargo Crew for both front of house service and back of house chefwear, supporting the full visual language the restaurant offers. The Gwen dining experience focuses on fire-based cooking techniques, alongside a European-based Butcher Shop showcasing Curtis’ team's love of premier meat production.

Job function and scale

The Gwen team required a modern chefwear range alongside a sophisticated front of house uniform.

Our range of chefwear has been designed in consultation with Chef Curtis with extensive wear trials being conducted at Gwen LA prior to launching our range. – Chef Curtis Stone provided his industry expertise on all of the important details, including, the best placement and length of straps, pockets for tools and feedback on fabric weights and garment comfort.

The Gwen LA team now wear our hard-wearing Banjo Chef Range of aprons, chef jackets, and work shirts day in day out and we are confident in the performance our chef wear delivers, knowing our uniforms are Built For Work!

Front of house appeal

The Gwen team required uniforms for both their chef and kitchen teams and their front of house, restaurant managers, servers and bar staff.

The colour palette for the Front of House uniforms needed to be cohesive and in line with the Gwen brand and interiors, while still allowing each job function to be identified on the restaurant floor.

A contemporary monogram range of black, white and charcoal shirt dresses, shirts and vests were delivered across this team.

Designed by chefs, built for work

Working with Curtis Stone for over three years on chef uniform wear trials at his second restaurant Georgie resulted in a uniform range designed by world-class chefs and built for work.

The kitchen team at Gwen are decked out in the Banjo Chef range of Khaki and Navy aprons, White Chef Jackets and Shirts. This classic combo of green and navy provides a sophisticated look to the whole kitchen crew and to head chef Curtis Stone.

"I couldn't be more excited. Cargo Crew have dressed the entire Crew and I think everybody looks really smart. They're incredible aprons!"
